1 (8 to 10 oz.) fresh horseradish root, trimmed, peeled, chopped (about 1 3/4 cups)
1/2 cup water, approximately
3 Tablespoons white vinegar
1/4 cup sugar

Blend all ingredients in a food processor or a large blender.
Pour into a mason jar or a suitable container and refrigerate.

Can be prepared up to a week before using.
