2 tablespoons olive oil
2 leeks, cleaned, thinly sliced, white and light green parts only
2 cloves garlic, minced
2 teaspoons thyme leaves, optional
1 tablespoon tarragon, chopped, optional
1 cup arborio rice
1/3 cup dry white wine
3 cups vegetable stock, warmed, divided
3/4 cup frozen peas, thawed
2 tablespoons non-dairy butter
1/2 cup non-dairy Parmesan cheese, grated
Kosher salt and freshly ground black pepper, to taste

Preheat the oven to 375ºF.

Heat a shallow Dutch oven or sauté pan over medium-high heat and add olive oil.
Add the leeks and cook until almost tender, about 4 minutes.
Add the garlic, thyme and tarragon during the last minute of cooking.
Season with salt and pepper.
Add the rice and brown slightly in pan for 1-2 minutes, until lightly opaque.
Add the wine and allow to reduce by half.
Add 2 cups of vegetable stock and stir to combine.
Bring to a simmer, cover and place in the oven to bake for 25 to 30 minutes or until the liquid is absorbed and the rice is al dente.
Remove from the oven, stir in the remaining vegetable stock, peas, non-dairy butter
and non-dairy parmesan cheese.
Season with additional salt and pepper and serve.

Note: Can substitute medium-sized yellow onion, diced, for the leeks

1 small red onion (peeled, finely diced)
1 bag chopped kale (8 ounces, about 6 cups)
1/4 cup vegetable stock
1 tablespoons red wine vinegar
1 teaspoon red chili flakes
Kosher salt and freshly ground black pepper, to taste

Hummus

6 pocketless pita breads
2 tablespoons olive oil

In a large sauté pan, add olive oil and heat over high heat.
Add red onion and cook until almost tender, about 4 minutes.
Add kale and allow to cook until slightly wilted, about 3 minutes.
Add vegetable stock, vinegar and chili flakes and allow to cook until wilted, about 4-5 minutes. Season with salt and pepper.

Preheat grill or grill pan to medium heat.
Brush pita on both sides with olive oil and place on grill.
Allow to cook until charred and warmed through, about 2 minutes per side.
Remove pitas to a plate or platter, spread hummus on top of each pita and top with kale.

Note: Can use your favorite flavor of store-bought hummus for these flatbreads.

1 1/2 cups Arborio rice
5 cups simmering vegetable stock, divided
1 cup grated non-dairy Parmesan cheese
1/2 cup dry white wine
3 tablespoons non-dairy butter, cut into small pieces
1 teaspoon kosher or sea salt
1 teaspoon freshly ground black pepper
1 cup frozen peas

Preheat oven to 350°.

Place rice and 4 cups of vegetable stock in a Dutch oven.
Cover and bake for 45 minutes, until most of the liquid is absorbed and rice is al dente.
Remove from oven.
Add remain vegetable stock, cheese, wine, non-dairy butter, salt and pepper.
Stir vigorously for 2 to 3 minutes, until rice is thick and creamy.
Add peas and stir until peas are heated through.
Serve hot.
